Smoked Brisket
Low and slow is the only way. A full packer brisket seasoned with a simple SPG rub, smoked over oak until it hits 203ยฐF and the probe slides in like butter.

Handmade Pasta al Pomodoro
Fresh egg pasta rolled thin, tossed in a San Marzano tomato sauce cooked low and slow with good olive oil, garlic, and basil. Simple done right.

Birria Tacos
Braised beef in a rich chile broth, crisped up in a pan with melted cheese and served with consommรฉ for dipping. San Antonio approved.
